From morning until late at night, their quick-service restaurants in Canada and the United States—recognizable by their bright yellow-and-brown-striped awnings—prepare only eclectic, original takes on the hearty dish. French fries are cut fresh each day from Idaho potatoes or sweet potatoes, and rich, peppery gravies are mixed in-house. The menu features more than 30 variations on the Quebecois comfort food, beginning with the traditional version topped with local cheese curds and, surprisingly, not a single beaver pelt.
