The Bite KC
The Bite KC's owner and chef, Carlos R. Mortera, doesn't shy away from his Mexican heritage. It's cooked right into every item at his sandwich shop, right down to the bread: bolillo baguettes, similar to the loaves popular on the Yucatan peninsula. Sandwich fixings such as chicken carnitas, housemade soy chorizo, and sriracha crema also pay homage to Mexican cuisine, as do the housemade tamales.
This isn't a straightforwardly Mexican joint, though. Guests can also opt for crab-cake sandwiches with seaweed slaw, or Elvis-worthy creations stuffed with banana, peanut butter, prosciutto, and Nutella—the King's four favorite hair products. Really, there's only one category that completely fits The Bite KC: lunch spot, thanks to its daily 4 p.m. closing time.
