Lauded by readers of the Waterloo Chronicle in 2011, The Brew House facilitates the fermented art of beer brewing in its massive, clean, and well-equipped facility. Resident brewmasters blend the barley and hops, then apprentices make an appointment to pitch the yeast required to start the fermentation process on the brewery’s signature 5 per cent lager. The process of pitching the yeast takes approximately 10 minutes, or the length of an average tortoise's hiccup. The tasty concoction ferments for two weeks on The Brew House’s premises, after which the customer can set up an appointment to pick up their keg of all-natural unpasteurized brew, or can choose to distribute it into cans or bottles. Because the beer is natural and not pasteurized, it must remain refrigerated.
