The distinctive flavors, fruits, and spices of the Caribbean are always on display at The Island. Here, chefs use organic produce and local, freshly caught seafood to prepare favorites from nearly every island in the region. At the raw bar, chefs use a light hand to perfect the natural flavors of oysters and snow crab. But for other dishes, they spend hours stewing pork in a ginger sauce or stuffing red snapper with bits of lobster and a passion-fruit sauce.
The house bartenders, however, rely more upon the flavors provided by the islands' fruits. They create a whole roster of tropical drinks that use fresh juices as well as the house's rum infused with banana, cinnamon, vanilla, and absinthe. Every night, the sound of their cocktail shakers blends in with the lively music of bands that grace the restaurant's stage. Together, the bartenders, band members, and watches that only say "Island-O'Clock" work together to create a lively after-hours bar scene.
