For Travis Garrant, executive chef of The Mandrake, the true challenge of tapas is making a big impression with a small plate. "You're more aware of what's going on the plate," he says in a video on the restaurant's website. "You're actually building the different flavors on a smaller platform." Indeed, what his meals lack in size they make up for in flavor—a small seared-salmon filet, for instance, is dressed with pomegranate, cucumber, goat cheese, and pickled onions.
The complex menu is complemented by a thoughtful beverage program. Signature cocktails feature mixers made in-house, and the wine list boasts a well-balanced blend of international and domestic varietals. There are more than 30 craft beers on hand as well, which guests can sip while watching a game at the bar or watching themselves in a hand mirror.
