After opening in the fall of 2013, it didn't take long for The Marshal to make some waves: by November, Zagat had already selected the restaurant's meatloaf for its "Best Thing We Ate" feature. Needless to say, the meatloaf had no trouble winning over the famed publication with its blend of brisket, chuck, and sirloin stuffed with roasted red peppers and mozzarella. And since then, The Marshal has won over one visitor after the next.
Every cooked dish at The Marshal emerges from a brick oven—braised short ribs, roasted scallops, and fresh breads, to name a few. But before they even reach the oven, seasonal ingredients originate on local farms from all around New York state. The menu's farm-to-table theme is evident in each dish's description, which include where all the ingredients hail from. The brick-oven cooking process, meanwhile, adds a certain coziness to meals, a vibe that is only re-enforced by the restaurant's layout, which features less than 30 seats and knowledgeable servers at every turn.
