From the moment he conceived his food truck venture, Tom knew he'd be crafting every entree to order and from scratch. And so, he designed his workshop to his own exact specifications, customizing every inch of his truck's interior himself. From arranging ingredients in a way he finds personally intuitive, to replacing the truck's eject button with a guacamole spigot, Tom has personalized every inch. This, Tom explains, helps him achieve the pace and sense of "flow" his fresh meals depend on. Those sidling up to his vehicular window can taste this attention to detail, whether they're fueling up with a Maine lobster tostada, or tucking into nachos topped with chorizo and poblano chili queso. Some swing by earlier for the breakfast options, like the goat-cheese-, prosciutto-, and roasted-tomato-stuffed quesadilla.
