About The Rome Restaurant
It's often said that the more things change, the more they stay the same. This statement rings true for The Rome Restaurant. Since opening in 1965, the Franklin eatery has undergone a few changes, the most notable being its ownership. Founders Eugenio and Filomena Colace are no longer at the helm, and that's because they've passed the business down to their five sons. Likewise, the menu of Italian cuisine has been tweaked here and there, but all its items—many of them homemade daily—remain preservative- and additive-free. Read on to learn about a few of The Rome's standout dishes.
- Chicken parmigiana: One of diners' favorites, this entree features lean chicken breast that's breaded before being topped with homemade tomato sauce and melted mozzarella cheese.
- Eggplant Ala Roma: Breaded eggplant with prosciutto and provolone cheese form the two layers of this hearty dish, which chefs finish with mozzarella, mushrooms, and a light sauce of garlic and marsala.
- Scallop and shrimp florentine: This seafood dish features sautéed shrimp and scallops accompanied by grilled ham and baby spinach, all of which sits atop a bed of homemade spaghetti in a lemon-cream sauce.
