Tivoli & Lee
At Tivoli & Lee, chef Marcus Woodham aims to modernize Southern cuisine. His first distinctly 21st-century move was making his eatery a farm-to-table one, serving only fresh, seasonal produce from local farms. Next, he and his team got to work on signature Southern dishes. They updated short ribs with salted root beer syrup and gruyere, and glazed chicken in sweet tea. They even updated the typically untouchable brunch staple, chicken and waffles; their spin on it, "Quail 'n' Waffles," is served with blueberry and ham jam.
