Tomoya Japanese Bistro & Bar sates hunger fits with authentic Japanese dishes and makes meals interactive with its traditional guest-prepared shabu-shabu hot pots. Salads begin the expansive meal; then, after choosing beef or seafood, diners cook the meat and accompanying vegetables in an actively boiling broth at the table. The process gets its name, “shabu-shabu,” from the sound of the meat swishing in the broth, which is also the sound yet-uncooked vegetables make when feeling left out. Once the meat is cooked to preference, diners can then dip the crispy morsels it in a choice of sauce. After relishing the beef or seafood, diners then slurp up the remaining broth as a soup with accompanying rice or noodles and any remaining vegetables.

Inside Tomoya Japanese Bistro & Bar, chefs aren’t the only ones cooking. Though they do craft an array of sushi and traditional Japanese noodle and rice dishes, they also look on as diners marinate their own steak, seafood, and vegetable morsels in pots of hot shabu broth. Servers ferry some of these dishes to small wooden tables and place them on woven mats. The interior immerses visitors in a colour palette of cool grey stone and warm browns, which recessed ceiling lights illuminate. Small canvas paintings of flowers balance out empty wall space, elegantly popping like a peacock that wandered into your living room.
