Trimbo's Pizza’s chefs cook classics pies topped with cheese and pepperoni, and bump it up a notch with specialty pizzas covered in barbecue chicken. And then there are the Off The Hook pies that eschew tradition for a white sauce base bedecked with clams or a Mexican-flavored agglomeration of taco meat, cheddar-jack cheese, olives, onions, tomatoes, lettuce, salsa, cilantro, and sour cream. Of course, the chefs allow customers to call the shots and create their own ingredient combinations atop New York–style and Sicilian crusts. Pizza toppings can also be fashioned into panini and hero sandwiches.
