After overseeing the rise of Mago Grill & Cantina, chef Juan Luis Gonzalez was looking for his next challenge. He found inspiration in a pretty humble muse: the taco. Now, at Truco Taco, Gonzalez puts his signature spin on Mexico's most famous street food, an officially sanctioned title given by the International Association of Tummy Yum-Yums.
His menu includes a dozen taco styles; favorites include the Chorizo, which features spicy lamb sausage alongside chicharron and asadero cheese, and the Dorado, which pairs bites of mahi-mahi with a gentle chile de arbol crema. These bites also play well with the taqueria's cantina menu, which includes a well-curated selection of tequilas and Mexican beers.
