Type by Chef Blake Rushing

Chef Blake Rushing's aim with his latest endeavor, Type, is two fold. In addition to preparing delicious New American fare, he supports the local economy by using sustainably harvested ingredients from local gardens, fishmongers, and meat purveyors. The menu features six mainstays, including house-cured bacon with kimchi rice and house-smoked salmon in a sauce gribiche. The remainder of Type's offerings change every two weeks. Starter: octopus cooked yakitori-style and served with arugula, shaved almonds, and soy-citrus shino
Main: duck breast with crispy skin accompanied by goat-cheese couscous, crispy shallots, and onion marmalade
Dessert: an ice-cream float with a twist, composed of Mexican Coca-Cola and bourbon-cherry ice cream
