Uli's Famous Sausage

Uli Lengenberg knows a thing or two about pressure. The son of German restaurant owners from Westphalia—also known as "sausage country"—he had large shoes to fill when he decided to devote his life to his land's staple crop. But the certified Meister wasn't daunted. He took his expertise and spice rack to Seattle, where he now distributes his sausages to retailers and ships them to homes throughout the country.

The pressure is still on, though. Uli strives to emulate sausage styles from all over the world, including Spanish chorizo, Polish kielbasa, and English bangers. While visiting Taiwan, he was even asked by the South African Embassy to make South African boerewors—sausages flavored with coriander and red-wine vinegar. Proof of his success: the boerewors are still in his catalogue today, alongside Portuguese linguica and Louisiana hot links.
