V Cuisine's executive chef, Jude Volcy, prepares Haitian cuisine with all the traditional Creole spices. His philosophy is to "allow the natural flavors of food express themselves," whether those flavors come from sweet fried plantains, spicy empanadas, or citrus-marinated conch. House favorites include the Creole fish amandine served with rosemary new potatoes and baby cress, or plates of braised and marinated goat meat. A variety of juices compliment each meal, pairing beef, goat, and seafood with the flavors of papaya, banana, and mango.
