Vacca Grill & Lounge
Dario Oleaga is a visual artist first and foremost. So when he was conceptualizing Vacca, it had to be much more than just a place to get some good food. He worked with architect Ruperto Arvelo to transform a former mechanic's garage into a nearly 6,000-square-foot playground for the senses. LED chandeliers change their pace and hue to the beat of world music; 3D murals of horns and paper butterflies entice you to touch them. Much of the art comes from the Altos de Chavón School of Design, a Parsons affiliate in Oleaga's native Dominican Republic.
But of course, they didn't skimp on the food either. Naturally, much of the menu is inspired by Latin flavors. Churrasco beef is skewered and paired with risotto, and garlic shrimp pair beautifully with yucca fries. The wine list features some of the world's most sophisticated varietals—Armand de Brignac champagne, Duckhorn Vineyards cabernet, and Antinori yignanello among them.
