The class was great and the food was good. We had to sit in the back and could not hear very well. People around us kept talking. The instructor needed a good microphone. It would have helped the experience so much.

Michael was amazing! He shared alot about the history of NOLA food scene-- in particular that Cajun is a person, Creole is an adjective :) MIchael had such a fun approach, it did not matter that there was a room full of people, he made each person feel like they were part of the action. The dishes he made were superb, and I loved all the tips and tricks he threw in to help us be successful when we try on our own! The Chicken Creole was SOO tasty, and the gumbo...Yes Michael was right...it did not need ANY seasoning because the blend of flavors was superb! Finishing off watching Michael make Pralines... again, hearing all the tips of how to get ours to turn out perfectly should really help when I try my own! Michael was funny, professional, and knew so much about NOLA and all the dishes he was creating. I loved every minute of the time there!
