Drawing from over 30 years of baking experience, Lou van Velkinburgh conducts a symphony of skilled bakers as they fill the air with the harmonious scents of fresh pastries, cookies, and customized cakes. Bicuspids sink into the moist cake and buttercream frosting of the confectionary’s specialty petits fours ($15–$17/dozen), which come in white-almond, chocolate, or strawberry incarnations. Spruce up holiday parties with Christmas specialties, including snowy trail mix—a mélange of white chocolate, cashews, chex mix, and pretzels ($12/lb.)—snowball cookies ($5/dozen), or a pumpkin log ($10), perfect for constructing cabins to house pumpkin Abe Lincoln. Pastry artists craft customized sheet-cake masterpieces ($25–$55) baked fresh for special occasions such as birthdays, Mardi Gras, and anniversaries. A selection of locally roasted Mississippi Coffee Company gourmet brews keeps cookie-swallowing organs well oiled.
In candy-making classes, a professional local sweetsmith grants her charges the skills to craft delicate gourmet truffles on a whim. During the three-hour session, students learn to make caramel and chocolate truffle fillings and properly temper chocolate before trying their hands at crafting candies in a variety of different styles. Pupils can tote their finished goodies home once the class is through, or use them to win over a stern librarian with a secret sweet tooth. A large portion of the bakery’s proceeds benefits The Christmas Village Foundation, a residential ministry that supports disadvantaged women. Women residing at the Village acquire job-skills training by working at Village Confections.
