To make un-fine wine, simply place grapes beneath a silk pillow, repeatedly mash your head against it, and then wring the pillowcase into a nearby mouth. Taste traditionally produced fine wines with today’s Groupon: for $39, you get one ticket to the Blend It Up Wine Experience (an $80 value) at Vintner's Cellar Custom Winery of Greater Sacramento in Rancho Cordova. Classes are held Wednesdays at 6 p.m. and Sundays at 4 p.m.
Vintner's Cellar's Blend It Up Wine Experience lets amateur alchemists play matchmaker with their favorite vinos, blending together different breeds to create a delicious customized libation. Under the guidance of the winery's trained tipplers, groups of six will loosen up their sniffers and sippers with a crash course in wine-aroma identification–instilling them with the power to suss out everything from fruit and floral notes to their malbec's favorite brand of grape aftershave. Fledgling fermenters then take on the business of creation, using Vintner's Cellar's select wines to commingle competing and complementary varietals. Students can augment a chardonnay's oak-soaked overtones with a spicy splash of pinot grigio, or force merlot and shiraz to work through their red-blooded differences with a full-bodied in-glass tussle. Once the couture concoctions reach maximum flavor calibration, guests will enshrine a separate take-home creation (selected by the wine expert) in a commemorative bottle, complete with cork, foil, and a custom-designed label.
Blend It Up classes take place amid the Old World charm of Vintner's Cellar's winery and include well-paired comestibles culled from the kitchen's appetizer menu. After classes conclude, Groupon holders can also take advantage of a 10% discount on any bottles or batches purchased from Vintner's Cellar's extensive holdings.

Imbibers don't just sniff, swirl, and sip their wine at Vintner's Cellar Custom Winery—they make it themselves. During this unique process, Vintner's experienced staffers guide customers through the first steps of the fermentation process. After six to eight weeks, aspiring winemakers pour their batch into between 24 and 30 bottles, which they then emblazon with custom-designed labels or tribal-themed temporary tattoos.
Vintner's Tuscan-style whites, reds, and dessert wines are also available by the glass, bottle, and half-bottle during regular tastings. A trim food menu brims with cheese platters and chocolate-wine truffles that pair perfectly with wines made from California's most well-adjusted grapes. Winemaking and pairing are taught in a Blend-it-Up Experience, during which customers create unusual flavor profiles by mixing different wines together.
