The perfect food-and-wine pairing is like the fateful meeting of destined lovers—best celebrated with a tiny mock wedding presided over by a curmudgeonly pepper mill with a heart of gold. Since the epic Prince party of 1999, father-and-son winemakers Clint and Clinton Clingerman have been harvesting vine-ripe fruits in the Baraboo Bluffs to brew three grape wines and seven fruit wines. Each bottle is filled with all-natural wine made without preservatives, added sulfites, or old wives’ tales. The four-course wine tasting ($60) takes place in Von Klaus Winery’s Tasting Haus, with candlelight-illuminated couples communing over four seasonal wines and a spread of different Wisconsin cheeses, bread with seasoned dipping oils, shrimp or smoked salmon, and hand-dipped chocolate strawberries or homemade wine truffles. As a token of inebriation, you will also receive a bottle of wine ($10.95–$11.95) to bring home for fireside or rooftop toasts. Call ahead to schedule a reservation.

About Von Klaus Winery Tasting Haus
Ivy snakes around door frames and fine stemware dangles above the Von Klaus Winery Tasting Haus’s bar where racks of all-natural fruit wines give off a kaleidoscope of colors. In this space, Von Klaus's staff re-creates the secluded winery experience right in downtown Baraboo. During four-course tastings, they pour samples of their sulfite- and preservative-free wines crafted from handpicked apples, wild cherries, or New Zealand kiwis. As guests gaze out the windows onto the historical square, the staff brings out small plates that may include Wisconsin cheese, jumbo shrimp, and chocolate truffles. As intimate as these pairings can be, the team at Von Klaus also finds a way to re-create the same feeling on a larger scale at private events. In addition to mobile tastings, the winery also brings its traveling vineyard to events in which a professional wine steward is on hand to offer guests a variety of sips.
