Cutters Crabhouse's simple floor plan proves that sometimes it's best to stick to what Mother Nature gives you. In this case, that's a spectacular view. Every seat in the house has sight-lines toward floor-to-ceiling windows that open out onto Elliott Bay, Mt. Rainier, the Olympic Mountains, and the Port of Seattle.
But the restaurant's designers aren't the only ones who appreciate the wonders of the Pacific Northwest. The chefs do too. For proof, just look to their takes on seafood and contemporary Northwest cuisine, from baked lobster and crab gnocchi to fresh fettuccine and jumbo prawns. They also prepare sushi and maki rolls, as well as a lunch special that's as beloved by sailors as a hilarious novelty compass: Manny’s pale ale–battered fish and chips. To go with these seafood specialties, bartenders mix signature cocktails using seasonal juices, and meals end with the likes of crème brûlée.
