The chefs at Washington Park Grille twist American and Italian cuisine together to form an array of gourmet dishes that speckle the tasting menu. A choice of appetizer begins each meal and tranquilizes stomachs before they revolt against pancreatic laws, with flash-grilled hearts of romaine invading maws with backup from strawberries, candied walnuts, and gorgonzola-basil vinaigrette. Entrees top tables with rosemary-marinated beef tenderloin, complete with caramelized shallot sauce and blue-cheese mashed potatoes, or grilled salmon and risotto milanese, dressed in arugula, parmesan, and sun-dried-tomato relish. Finally, the Colorado peach crème brûlée tart concludes three-course gnaw-a-thons with palisade peaches and puff pastry as flaky as a cheerleader’s chalk collection.
