Instructors provide students with basic and intermediate wine knowledge, including how to identify varietals, blends, and style; how to store and serve wine; how to pair wines with food; and how to assess quality. In the second hour of class, pupils are led on a backstage tour of Backyard Vineyards to help them understand the grape-to-bottle process. There, they can taste wines still aging in oak barrels.
In the third hour, students go through sensory training with a tasting of five wines and matching gourmet cheeses. At the end, they take home the printed class materials and a personalized certificate of completion. See the schedule.

Gerum's achievement distills three generations of fine-dining experience that was passed down from his father, a chef, and his grandfather, a maitre d'.
