Classes have around 12 people and include demonstrations and hands-on cooking. They may cover a range of specific topics. The three-hour introductory vegetarian cuisine teaches students how to make a range of Indian staples, including chai tea, chickpea curry, flatbread, and seasoned veggie rice. There is also a non-vegetarian introductory class where students make chicken curry and other meat-based dishes, along with an appetizers class that introduces chickpea-battered potatoes, samosas, tangy chaat dishes, spinach pakora and a range of other snacks. The 90-minute classes focus more closely on specific dishes, which may include paneer tikka masala, eggplant bhurta (a favorite streetside dish), pav bhaki (spiced vegetable sloppy joe), or saag paneer (spinach with cheese) with either rice or naan bread.<p>

About Mala's Indian Cooking Classes
Nutritionist and chef Mala Patel guides participants through a demonstration and hands-on, introductory class that covers essential spices and techniques of Indian cooking. Sessions such as classic vegetarian and non-vegetarian cuisine, Street Side Foods and a samosa workshop ensure fingers don't get bored and wander onto other people's plates. Small classes consisting of no more than 10 chefs-in-training intimately explore meat and veggie dishes flavored by aromatic spices, garlic, ginger, and green chilies. Students use fresh, ingredients to prepare a meal from scratch and leave with a folder of all recipes covered during the class.
