Why did the owners choose the name "Yamanoya," which means "peak of the mountain" in Japanese? Perhaps it refers to the eatery's reputation as a pinnacle of freshness and flavor. It's certainly not because of where the food comes from, since chefs Anthony and Mark Chen work primarily with ingredients from the sea. The duo hand-crafts sushi rolls stuffed with proteins from mackerel to octopus, and prepares classic plates of shrimp tempura, salmon teriyaki, and miso-marinated black cod. Diners feast on these dishes in a dining room with dark wood floors and elegant red draperies, pairing their plates of fresh fish with imported Japanese beers and lychee-flavored martinis.
