With a rainbow of Latin spices at their disposal, the chefs at Zoila's Bistro rely almost entirely on locally sourced ingredients. The kitchen orders exclusively Angus beef from the Hudson Valley, trims and cooks locally raised chicken, and fashions all of its sauces in-house. Chefs even use ice cream from a local dairy as the base for their housemade malts and shakes, which they blend in antique 1940s mixers for an additional flair. The menu, meanwhile, features Latin-influenced house specialties such as spicy pork and beans, Angus rib-eye steaks dressed with creamed spinach, and burger sliders sautéed to a golden-brown in cast-iron skillets.
