This thing is really easy to use--zap your milk in the microwave until it reaches 185 degrees--11 minutes in mine--let it cool, covered, until it's at 100-110 degrees, add yogurt or starter, set the timer, and leave it alone for 8-10 hours. Different yogurts give very different degrees of tanginess and texture. Not all of the resulting yogurt will fit in the strainer at first--that's the only drawback I've found--but over about 20 minutes the yogurt in the strainer will reduce in volume enough to put in the rest. It will be a long time before it pays or itself, but I'm having fun.
