The brewmasters start with organic malt for all of their year-round beers and most of their seasonal recipes. Brewing happens twice a week. The original West Seattle brewery churns out 200 gallons, while the Burien brewery produces 300. Both batches rest in cellaring tanks for four weeks before reaching your glass. The process results in seven year-round beers. These include the No Doubt Stout and the Luna Weizen, an American-style wheat beer made with organic malt imported from Germany. This commitment to sustainability extends well beyond beer. The pub menu features free-range chicken and all-natural beef, as well as buns baked with spent grains from the breweries.
