The distillery ferments Shochu in small batches, the way it was done in Japan back in the 1600s, with one small exception—Sodo handcrafts their version of "Japanese Moonshine" from local ingredients. Distillers combine pearled Barley from Washington's eastern fields with Koji fungus—the key traditional ingredient—to create the alcohol's signature flavor. Then, they dress up the mixture with field grown herbs and spices, such as fresh spearmint and fresh ginger.
