    Smitten Ice Cream Robyn Sue Fisher always loved ice cream. What she didn’t love, though, was the way ice cream was packed with preservatives and emulsifiers to prolong its shelf life. So she took matters into her own hands—and the hands of some crafty engineers—to create Brrr™, an ice-cream machine that uses liquid nitrogen (at -321 degrees) to churn the smoothest, densest ice cream imaginable using constantly moving beaters. What’s more, the machine makes the ice cream from scratch in mere minutes, using fresh, unfrozen ingredients. Brrr™ dazzled its first customers from atop a Radio Flyer wagon in 2009, which Fisher carted around San Francisco’s streets to sell the first of her Smitten Ice Cream. She had by that point recruited a pastry chef, Robyn Lenzi, to help select the tastiest ingredients and flavors. Along with organic milk and cream from the nearby Beretta Dairy in Sonoma, Smitten also sources its strawberries, chocolate, and other hand-selected ingredients from local farms and purveyors. These days, Smitten Ice Cream lovers don’t have to follow the wagon tracks to get their liquid-nitrogen-ice-cream fix—there are four different shop locations, including the original one, a rusted shipping container that Fisher and Lenzi converted into an energy-efficient store. While the Brrr™ machines continue to put on a fun show for customers, as Fisher told Fast Company, she’s more interested in the end result: old-fashioned ice cream, made with hand-selected ingredients from local farms. “The gist of Smitten is going back in time and using a new technology to do that better than ever before.” From Liquid Nitrogen to Ice Cream: A Quick Guide to How It Works How do Smitten Ice Cream’s Brrr™ machines create the “best ice cream ever”?
