Days 1 and 2: Pasta Cooking Class and Parma Historic City Center Tour

Via a 10 a.m. transfer from Milan Malpensa Airport (MXP), you’ll arrive at Academia Barilla in Parma, an institution dedicated to preserving and disseminating Italy’s culinary traditions. You’ll spend the afternoon exploring Parma at your leisure. Parma is home to some of Italy’s most important culinary exports including parmigiano reggiano, prosciutto di parma, balsamic vinegar, and tomatoes. In the evening, the group will meet briefly to discuss the itinerary before dining at a local trattoria.

The next morning, you’ll mix regional sauces and make fresh pasta in your first cooking class at Academia Barilla, followed by lunch with the chefs. Later that day, learn about the colorful history of Parma—famous for its parmigiano cheese and prosciutto di Parma—on a guided walking tour to the city center.

Day 3: Parma Valley, Castles, Wine Tastings

Next, the tour heads to the world-famous Parmigiano Reggiano cheese dairies. You’ll see how cheese is produced and get to sample some for yourself. Afterwards, you’ll taste prosciutto near the base of the Apennine Mountains before lunching at a meticulously preserved medieval castle. The day ends with a stop in the hilly Colli di Parma wine region to sip some of its varietals.

Day 4: Modena and Zibello

Next up is Modena, a town just east of Parma and home to two famous Italian luxury carmakers—Ferrari and Maserati. While in Modena you’ll taste the town’s renowned balsamic vinegar. Then the group visits a producer of culatello di zibello, thick cuts of pork that go through an intricate curing process. The pork dries for a year in caves that are more than five centuries old. You’ll tour one of the caves and taste the finished product, then dine at chef Massimo Spigaroli’s Ristorante al Cavallino Bianco before returning to Parma.

Days 5 and 6: Barilla Pasta Factory and Hilltop Farewell Dinner

The tour’s penultimate day is marked by a visit to the Barilla pasta factory—the biggest of its kind in the world—where you’ll learn how pasta is produced in various sizes and shapes. The medieval Castello Dell’Elfo makes a memorable setting for saying farewell to your fellow travelers over a robust dinner. Say goodbye to Parma amid views of the city from high atop a hill. The next morning you’ll take a 6 a.m. private transfer back to Milan Malpensa Airport.
