Days 1 & 2: Pasta Cooking Class and Parma Historic City Center Tour Via a transfer from Milan Malpensa Airport, you’ll arrive at Academia Barilla in Parma, an academy dedicated to preserving and exploring Italy’s gastronomical traditions. You’ll spend the afternoon exploring Parma at your leisure. The group meets briefly to discuss the itinerary before dining at a local trattoria that evening.

The next morning, you’ll mix rich sauces and make pasta in your first cooking class at Academia Barilla. Later that day, learn about the colorful history of Parma—famous for its parmigiano cheese and prosciutto—on a guided walking city tour.

Day 3: Parma Valley Visit, Dine at Medieval Castle, Wine Tastings The tour heads to the world-famous Parmigiano Reggiano cheese dairies. During your visit, you’ll see how dairies process the cheese and sample some yourself.

Afterwards, you’ll taste delicious prosciutto near the base of the Apennine Mountains before lunching at a meticulously preserved medieval castle. The evening ends with a stop in the hilly Colli di Parma wine region to sip its varietals.

Day 4: Modena Next up is Modena, a town just east of Parma, home to two famous Italian luxury-car exports—Ferrari and Maserati. Here, you’ll taste the town’s famous balsamic aged traditional balsamic vinegar.

Follow up by visiting a producer of culatello di zibello, thick cuts of pork that go through an intricate curing process. The pork dries for a year in caves that are more than five centuries old. You’ll tour one of the caves and taste the finished product.

Day 5: Salame Museum and Biodynamic Wine Located beneath the 9th-century Felino Castle, the Salame Museum chronicles the cured meat’s history and production with exhibits displaying centuries-old butcher’s tools and early sausage-stuffing machines.

Next, you’ll make your way towards Castell’Arquato, a hilltop town with a large, medieval castle. Wine tastings at Lusenti winery wrap up the evening.

Days 6 & 7: Barilla Pasta Factory and Hilltop Farewell Castle Dinner The tour’s penultimate day is marked by a visit to the Barilla Pasta Factory, the biggest of its kind in the world, where you’ll learn how pasta is produced in various sizes and shapes.

Restored to its former medieval grandeur, the haunting Castello Dell’Elfo makes the idyllic setting to say farewell to your fellow travelers over a robust dinner. Say goodbye to Parma by admiring views of the city from high atop a hill. The next morning you’ll take a 6 a.m. transfer back to Milan Malpensa Airport.
