During the two-hour introduction class ($60 tuition, $18 materials), students mold vinegared rice into comfy nigiri couches on which fresh seafood lounges in unsuspecting leisure. Using Poseidon’s wrapping paper, fish-filled conical hand rolls take shape between sheets of crisp seaweed sheets.
