Chef Cardenas avoids Napoleon's blunders with a surf 'n' turf that effectively coordinates land and sea to conquer hunger, with twin 4-ounce grilled beef tenders backed by shrimp, vegetables, and roasted potatoes ($16). Traditional cannolis, sweet ricotta cheese wrapped in a thin pastry shell to keep warm from powdered-sugar snowfalls ($4.50), conclude meals with dulcet tones.
