Penthouse Catering

Fusion comes naturally to chef Russell Auckbaraullee. His family comes from Mauritius, an island nation east of Madagascar that's home to people—and food—of Indian, African, French, and Asian descent. That upbringing, combines with the culinary cornucopia of Toronto, has given him a taste for the "unexpected flavors, colors, spices, and herbs" that mark Penthouse Catering's approach, as summed up on the company's website.

Toronto locals and visitors alike are able to take part in a unique dining experience that includes Moroccan grilled quail, red snapper served in its native banana leaves, and chicken cacciatore are all in the international culinary team's repertoire. But that's just a start: Auckbaraullee and his creative creations are seemingly everywhere on the local food scene, from cooking demos on Morning Live and Daytime Toronto to the Toronto Mac n' Cheese Festival. He's especially virtuosic when it comes to seafood, having taken home top honors at the 2015 Toronto Sushi Festival with a Filipino-inspired twist on salmon rolls. Occasional classes and workshops let home cooks in on some of his secrets.
