One day, a once unemployed drummer, Joe Humel, was craving a bagel. This craving guided him to research recipes, subsequently inspiring him to found Rockstar Bagels. Since 2009, this facility has been stocking East Austin coffee shops, groceries, and food trailers with fermented, boiled, and freshly baked bagels to accompany morning coffee. In 2014, however, they opened their own walk-up window to serve bagel sandwiches to the public. Here, guests can choose from simple bagel choices, such as plain, whole wheat, and garlic, or opt for more unique flavors, such as their rosemary salt bagel, The Rockstar sandwich (served with scrambled eggs, a breakfast meat, and your choice of cheese and bread), and the every-so healthy Indie Fit sandwich, (prepared with egg whites, avocado, turkey, tomatoes, and spinach).
