As its name implies, this Hollywood eatery focuses on ramen. But Shin Ramen's signature dish is nothing like the instant ramen noodles most Americans are familiar with.   • Chefs spend one day preparing the eatery's chicken broth and two formulating the tonkotsu pork broth. Shin Ramen also makes vegetarian miso broth for vegetarians.
  • Diners can also opt to add flavorings, such as shoyu, which offers a slightly sweet soy-sauce base or that of the lighter sea-salt-based shio.
  • Visitors can choose between thick and thin egg noodles, both of which are made from scratch.
  • The toppings are seemingly endless. Proteins include chicken, char siu (barbecue pork), and onsen tamago (slow-cooked egg), and sweet corn, sautéed mushrooms, and cherry tomatoes are among the vegetable toppings. There are plenty of seasonings and garnishes, too, such as shaved bonita flakes and garlic cloves.
