We will bike through Metropolitan State University of Denver, the old Tivoli Brewery and Ninth Street Historic Park before stopping at the Buckhorn exchange. The Buckhorn Exchange, established in 1893, is Denver's oldest restaurant and a National Historic Landmark. Founded by Henry H. "Shorty Scout" Zietz—a former scout for Buffalo Bill—the establishment has a rich history of hosting notable figures, including President Theodore Roosevelt. Renowned for its Old West ambiance, the Buckhorn Exchange features an extensive collection of taxidermy with over 500 mounted animals adorning its walls. The menu offers a variety of exotic meats, such as elk, buffalo, and Rocky Mountain oysters, providing a distinctive dining experience that reflects Colorado's frontier heritage. Here we will try some Rocky Mountain Oysters before heading back on the road.
