During one-hour sessions, pupils explore the flavour and creation of chocolate, with classes touching upon how cacao beans are grown, the ethics of production, or the fillers used in mass production. Students sample cocoas from different of origins as well as different compositions culled from numerous manufacturers before tasting Xoxolat’s blended bars. Their bars combine unique flavours such as bacon and espresso, dark chocolate with sea salt and peppercorns, sour cherry and chilies, and many others.
