Aroma Indian Cuisine
Though he's been in the Triangle for less than a decade, Gamer Rawat is arguably one of the most accomplished chefs in the region. The Tibet native trained at the world-renowned Bukhara in Delhi—a seven-time honoree on Restaurant magazine's Best 50 Restaurants in the World list—and honed his skills at New York City's oft-lauded Tamarind. Today, he helms his own restaurant, Aroma, where he crafts Indian favorites and Indo-Chinese fusion dishes.
Though it encompasses much, Chef Rawat's menu helpfully guides eyes and appetites by dividing plates into vegetarian and nonvegetarian categories. Though the malai kofta—a fried veggie and cashew dumpling—is a must-order according to the News & Observer "even if you're an avowed carnivore." Guests will find the Chinese influence in options such as szechuan fried rice and sesame chicken, any of which would pair nicely with the beers or wines behind the bar.
