What is one of your most popular offerings? How is it prepared?
Wednesday is fried chicken day. Organic Springer Mountain chicken soaked in buttermilk brine for seven days then fried and served with gouda mac and cayenne buttermilk slaw. Most popular sides are house made smoke rubbed chips, fried chicken skins, and pork cheek pastrami home fries!
What was the inspiration to start or run this business?
Lafayette needed upscale dining in a casual atmosphere. Acadiana has amazing farmers and age-old food traditions. We wanted to showcase the region and culture in a way that hadn’t been done before.
What do you love most about your job?
Steady supply of gouda mac and fried chicken skins!
