At Brickhouse BBQ, ranked among Madison Magazine’s Best New Restaurants of 2010, executive chef Tim Heinze smokes free-range meats and slathers homemade sauces on their fire-licked exteriors. The menu reads like Paula Deen’s butter-stained dream journal, listing southern-style staples and appetizers such as crispy golden hush puppies and pork ribs nested on a bed of crispy onion strings. Grill minders smoke St. Louis–style ribs until tender, and char grill steaks before smothering them in a mushroom whiskey sauce.

Sides such as cheddar grits, collard greens, and mac ‘n’ cheese partner up with entrees to do-si-do across palates. Guests can punctuate bites with 1 of 40 tap beers or cocktails such as the old fashioned, an in-house infusion of Kentucky bourbon with muddled orange, or the mint julep crafted with Maker’s Mark bourbon. Inside the restaurant’s two-level dining room, low-lit brick walls, exposed ceiling beams, and a mirage of silk tumbleweeds lend the eatery a chic, rustic vibe.
