Pupils master the art of making gnocchi the ancient Roman way, crafting the little dumplings with ricotta cheese, two-year-old parmesan, organic basil, and butternut squash and sage. At The Local Epicurean, owner Ryan Raredon, who has been profiled in the Grand Rapids Press, began pasta-making as a hobby.
