"Finally, someone in this town is taking the sandwich seriously." That might sound like serious praise for such a simple dish, but the StarTribune was right to lay it on thick. Be'Wiched co-owners and chefs, Matthew Bickford and Mike Ryan, both have experience working under James Beard Award nominees, and spend as much time choosing great ingredients as they do transforming them into gourmet sandwiches. They cure and smoke meats in-house, using only humanely-raised cuts that are free of hormones and antibiotics. Produce comes from locals like Farmer Bob, who personally delivers boxes of rhubarb and tomatoes.
Be'Wiched's pastrami and egg sandwich, served during breakfast and weekend brunch, was voted Best Breakfast in Minnesota by the Food Network. During lunch, there are gourmet creations such as tuna confit, served on focaccia with black olives, cucumber, and preserved lemon. And, the restaurant also recently expanded into dinner service, introducing evening-friendly sandwiches such as pork banh mi and lamb burgers, which go great with a cold Minnesota craft beer or a selection from the list of international wines.
