Butcher's Bistro is a whole-animal butchery restaurant. It sources cows, lambs, pigs, and other grazing animals directly from Colorado-based ranches, then works from the nose to the tail during an ongoing butchering process. Because of this method, the bistro's menu constantly changes, but diners can always count on plenty of fresh meats, such as dry-aged top sirloin, crispy smoked chicken, and pan-roasted pork loin. There's even a separate retail counter so guests can take home sausages and other savory snacks. As for beverages, the bistro rounds out its menu with cocktails, wines, and a carefully-picked selection of craft beers.
