It might seem unlikely to find an authentic Neapolitan pizza in California. But Gary Zendell makes it—using finely ground, low-gluten flour imported directly from Naples, mixed into dough for air-thin crusts baked to a perfect crisp. San Marzano tomatoes are hand-mixed into a sauce flavored simply with basil, salt, and lemon juice. Fresh mozzarella is stretched, balled, and packed in spring water to keep it moist until it's ready for slicing.
With such carefully sourced ingredients, it's no surprise that a few of the specialty pizzas here are inspired by traditional Italian recipes. But others are a bit more unexpected. The Sausage Bomb balances between sweet and spicy with Cajun sausage, pineapple, and caramelized onions, while Isa's Carnitas layers slow-roasted pork with pico de gallo, cilantro, and avocado. Their offerings don't stop at pizzas though: they also offer tasty plates of lasagna, along with house-made meatballs and savory wings. Whichever dish you choose, you can enjoy it on a dog-friendly patio that boasts three fire pits and one time zone.
