Chiseled from slabs of Brazilian blue marble, the countertops at Ocean Room look a little the water itself. It's a fitting decor choice, since the world's oceans are the source of all the eatery's fresh seafood meals. Although the fresh ingredients began in the sea, they take on new life inside Ocean Room's exhibition-style kitchen. Here, chefs hand-craft sushi rolls like the baked Gaslamp roll, which arrives stuffed with walnut shrimp, crab and avocado and drizzled in a secret-recipe sauce known only as "Dynamite." Chefs also stir pots of lobster bisque and hand-stuff crab ravioli. These plates often evoke outdoor dinners on a tropical beach, especially if diners pair them with a tropical cocktail flavored with pineapple juice or a whole, floating coconut.
