Over the Tapas
Whenever possible, Over the Tapas sources its ingredients from local purveyors—including itself. The restaurant has a ranch, located in Bozeman, that provides it with season after season of fresh produce as well as beef from certified cattle. To ensure fresh produce year-round, the ranch even uses a series of aeroponic towers to supplement the traditional gardens and greenhouses in which plants can put their roots up and relax.
The result is a bounty for Over the Tapas diners. Instead of protecting their plates with a moat of gravy, guests are encouraged to share Spanish-inspired tapas. (Gluten-free and vegetarian options make it especially easy for groups to agree on a dish.) The menu constantly changes to fit the season, holding everything from lamb sliders and mushroom ravioli to goat-cheese croquettes with a pine-nut crust. An extensive alcohol selection punctuates the dining experience, complete with sangria and Montana craft beers.
