Each season, Signature Grill's staff heads out onto the reserve with the Tohono Ohdem Indians to handpick the fruit the restaurant needs for its centuries-old recipes. But even if you didn't know the restaurant was so directly connected to Native American culinary traditions, there's a good chance you'd guess it after a meal there. Executive chef Danny Perez and his colleagues spin together a spread of seasonal, farm-fresh favorites and hearty cast-iron feasts with an unmistakeable southwestern streak. The cuisine ranges from mango-cinnamon-glazed salmon with chile couscous to southwest hummus with garbanzo beans and roasted peppers. In the morning, a sweeping breakfast buffet provides guests with an even more welcoming wake-up call than a rooster crowing in the soulful tone of Mr. Luther Vandross.
