How much cheese can a human being eat? A plate's worth? A board? Or maybe an entire cave full of it? Sona Creamery is one of the only places in the world where a person can answer all of those important questions. More than a hundred different cheeses cool and develop complex flavors inside the onsite aging caves, which are the result of cheesemonger Matt O'Herron's tireless work ethic. He searches the world to find intriguing cheese varieties, such as sharp cheddars from Vermont and Stinking Bishop from Britain. Others, including the home-made chevre, come from right in-house.
The cheese isn't the whole story at Sona, however. The venue serves its signature cheeseboards alongside breads, fruits, charcuterie, and wine and beer. On-staff experts even teach pairing classes to help guests determine what wine tastes best poured over which cheese. Sona Creamery's cheese reservoirs further benefit its onsite restaurant, where chefs incorporate the gourmet ingredients into mac and cheese, grilled cheese, and other familiar comfort foods.
